What started as a single oven in a small kitchen has grown into a neighborhood bakery rooted in the craft of slow fermentation and precise pastry work. Alex learned the trade from her grandmother in the Loire Valley, then brought those traditions home to Portland.
Every loaf is built from a starter that has been alive for over a decade. Every croissant is laminated by hand. We believe the best things take time - and that good bread, shared at a table, is one of the simplest pleasures there is.

Hand-laminated all-butter pastry filled with frangipane, topped with toasted almonds and a dusting of powdered sugar.

Crisp pâte sablée shell filled with vanilla pastry cream and topped with seasonal berries and a bright glaze.
